Veggie Bean Burger


Made from Red Kidney Beans (rajma), which are a good source of protein and fiber, this delicious snack can be a delight to your kids. Moreover, it’s simple, quick and deliciously healthy…
Health Check – Kidney beans are a good source of protein, thiamin (vitamin B1), phosphorus, iron, copper, magnesium, potassium and vitamin K. A study published in the Archives of Internal Medicine confirms that eating high fiber foods, such as kidney beans, helps prevent heart disease. It also prevents blood sugar levels from rising too rapidly after a meal, making these beans an especially good choice for individuals with diabetes, insulin resistance or hypoglycemia.
Ingredients
1 small cup red kidney beans (rajma) (makes 8-9 patties)
5-6 bread slices
8-9 burger rolls
2 green chillies (finely chopped)
1 teaspoon grated ginger
1 onion (sliced into thin pieces)
1 tomato (sliced into thin pieces)
9-10 cucumber slices
Sliced Cabbage/Lettuce (optional)
Cheese Slice (optional)
Salt to taste
Black Pepper
¼ teaspoon red chilli powder
½ teaspoon garam masala
½ teaspoon coriander powder
Chopped coriander/cilantro
Oil for cooking

Cooking Method
1. Soak the kidney beans for 2 hours, in hot water, prior to cooking.
2. Put the kidney beans to boil for 25-30 minutes, adding 2 cups of water and half teaspoon salt, in a pressure cooker. Simmer the stove after first whistle.
3. Drain water from the boiled beans and let it cool.
4. Once cooled, mash the beans in a food processor or using hands.
5. In a container add the mashed beans. Now, add all the bread slices (dip the corners of the bread in water and squeeze it nicely so that it mashed nicely).
6. Add the chopped green chillies, ginger and cilantro/coriander to the mixture.
7. Finally add all the spices (salt, chilli powder, garam masala and coriander powder) to the mixture and mash it nicely to prepare a dough.
8. Divide the dough into 8-9 portions.
9. Take each portion and flatten and roll into 2 inch round.
10. Now flatten each ball and roll into 3-4 inch round patty.
11. On a non-stick pan roast the patties, using very little oil (do not fry), until light brown on both sides. Keep the stove on medium flame to roast the patties nicely.
12. Take a Burger roll and cut it into half. You can roast these slightly on the pan if you want.
13. You can also roast the onions, if you like it slightly crispy. I personally like it this way.
14. Take a patty and place it in a burger roll and top it with a slice of onion, tomato, cucumber, lettuce (optional) and cheese slice (optional). Sprinkle some salt and black pepper over it. Seal the top of the roll with tooth pick.
15. Your delicious Veggie Bean Burger is now ready to be served with green chutney or tomato ketchup.
