Bottle Gourd Crêpes (Ghiya/Lauki ka Cheela)


Another great way to enjoy a brilliantly healthy vegetable, which is often ignored for being too boring or bland in taste. Made from Bottle Gourd, better known as Ghiya/Lauki in India, with a mix of gram flour these delicious and crispy crepes can be enjoyed best during the breakfast or as an evening snack.
Health Check – The bottle gourd (Ghiya) is low in fat and cholesterol yet high in dietary fibre. It contains 96% water and 100gm of it contains around 12 Kcal. It is rich in iron and also has vitamins C and B complex. It has sodium of 1.8mg per 100gm and 87 mg of potassium making it suitable vegetable for hypertensive patients. It is excellent for light, low-cal diets, as well as for small children, people with digestive problems, diabetics and convalescents.

Ingredients
6 tablespoon Gram Flour (Besan) (serves 2-3 people)
200 gms bottle gourd (Ghiya) (Peeled and grated/shredded)
2 green chillies (finely chopped)
Chopped cilantro/coriander
Salt to taste
½ teaspoon red chilli powder
½ teaspoon coriander powder
½ teaspoon garam masala
Water to prepare batter
Oil for cooking

Cooking Method
1. Take a large bowl and slowly mix all the ingredients together adding gram flour, grated bottle gourd/ghiya, chopped cilantro, green chillies, salt and all the remaining spices.
2. Gently add water as required to make a smooth, thick flowing batter which comes to a dropping consistency.
3. Now heat a non-stick- tawa or heavy bottom frying pan, then turn the heat on medium.
4. Put little oil on tawa (1tsp.) and spread 2 serving tablespoon of batter evenly on it.
5. Cover it with lid just for a minute so that it should cook inside also.
6. Then remove lid, put some more oil on the top & turn it upside down.
7. Let it be brown & crispy from both sides.
8. Repeat the same with rest of the batter.
9. Your delicious crepes or cheelas are now ready to be served.
10. You can enjoy these best with green chutney or tomato ketchup.
